Apricot Jam Biscuits 

Truly scrumptious and easy to make, this apricot jam biscuits recipe is the BEST! Served with your favourite tea and enjoyed with family and friends, these biscuits will satisfy anyone’s sweet tooth. 

   

   Ingredients: 

  • 4 cups all-purpose flour 
  • 4 eggs 
  • 1 1/2 cups sugar
  • 11/4 cups canola oil 
  • 1 teaspoon vanilla 
  • 1/2 teaspoon ground cardamom 
  • 1 tablespoon baking powder 
  • Apricot jam for filling – about 2 cups 

How to: 

  • Preheat your oven to 350 degrees F
  • In an electric mixer fitted with the paddle attachment, mix the canola oil and sugar together until they are well combined and then add the vanilla.
  • Add the eggs and sifted flour slowly and continue mixing 
  • When finished, place half of the dough on a greased cookie sheet
  • Press your dough onto the cookie sheet
  • Add the apricot jam and then shred the rest of the dough on top of the jam.
  • Bake for 20-25 minutes or until the cookies are golden brown.
  • Cool, cut into squares and serve. 

Tip: broil your cookies for about 3 minutes but keep an eye to avoid burning.

Hummus is a chickpea based dip that is staple in middle-eastern cuisine and is enjoyed across the world. Packed with healthy fats, hummus is our family’s go-to snack. I have been eating hummus for as long as I can remember and it is one of those best things that is so simple to make. 

Ingredients:

  • 1 can of Chickpeas
  • 1/4 cup yogurt 
  • 1/2 cup tahini sauce 
  • 1/2 tsp salt
  • 3-4 garlic gloves 
  • Juice of 1 lemon 
  • Olive oil for garnish 
  • Parsley for garnish 

Directions:

  • Rise the chickpeas in cold water and add it to your food processor.
  • Add the rest of your ingredients and turn on the food processor until all ingredients are well combined.
  • Garnish with olive oil, parsley and chickpeasas.
  • Serve with your favourite bread.

G U A C A M O L E

Made with ripe avocados, tossed with cilantro and served with tortilla chips; this recipe is beyond delicious. It is the best recipe E V E R. So go get ready and turn on your favourite show on Netflix and let’s enjoy this guac recipe.
  
Ingredients:

  • 4 ripe avocados (large)
  • Tomatoes (1/2 cup)
  • Onions (2 green onions chopped)
  • Lime (juice of 1 and a half)
  • Salt (1/2 tsp) 
  • Pepper ( 1/4 tsp)
  • Cumin (1/4 tsp)
  • Siracha 

Instructions:

Cut the avocados in half and remove the stone. Scoop the flesh in a medium bowl

  

Chop your tomatoes into cubes 

  

Chop your green onions and cilantro 

  
Add all ingredients on top of the avocados 

  

Use a potato masher to mash your avocados and to combine all ingredients together.
  
Serve with your favourite tortilla chips and enjoy!

Lazy Biscuit Cake 

Oh-so-tempting! A sweet and crunchy treat that you won’t stop eating. It combines the richness of cocoa with the crunchiness of biscuit to give you an amazingly flavoured cake. 

  
I don’t know about you but when it comes to drinking tea, my husband and I love to enjoy a little dessert on the side. It is like our tradition. I thought I would share this recipe with you since you can easily find the ingredients in your household. 

  
It is also perfect to take as gift to your friends house. I usually place them in a nice plate and wrap them up with a cute ribbon on top. You know that everyone loves a little treat. So go grab your ingredients and let’s get started! 

 
Here is what you will need for this recipe! 

Ingredients:

  • 1 pack Mary biscuit 
  • 6 Tbsp sugar
  • 1/3 cup unsalted butter 
  • 4 tsp vanilla 
  • 4 Tbsp Cocoa powder  
  • 1 egg

Process: 

  • Whisk the egg in a bowl and add the vanilla to it. 
  • In another bowl, whisk your butter along with sugar and cocoa powder
  • Add your whisked eggs to the cocoa mixture and continue mixing.
  • Break your biscuit into small pieces and add your cocoa mixture to it. 
  • Mix well until all ingredients are all combined.
  • Add you mixture to a parchment paper or a clear plastic bag and make it in the shape of cylinder.
  •  Place your mixture in the freezer over night.
  • Cut into small square pieces

Cucumber, Yogurt Salad  

 If you are like me who can easily get bored from eating plain yogurt, then you are in the right place! This recipe is so easy and requires only a couple of ingredients. You can eat it by itself or you can devour it as a side with many other main dishes. All you need for this recipe is some cucumber, yogurt, garlic and thyme. For precise measurements, continue reading below. 

Ingredients:
2 cups chopped cucumber 
1 cup yogurt 
3 garlic gloves 
1/2 teaspoon salt 
1/2 tablespoon thyme
1 tablespoon olive oil for garnish 
Process:
In a medium bowl combine yogurt, mashed garlic, thyme and salt Mix until you get a creamy consistency. Add this mixture to a bowl containing chopped cucumber. Mix your ingredients together and drizzle your olive oil on top and voila 🙂
